Greta Anna's Carrot Cake

This may possibly be the nicest carrot cake in the whole world - it's so moist! My friend Gillian just turned 50 recently & made us this cake for morning tea - now Gillian & Anne bought me The Greta Anna Recipes for my 30th - so she's been in our lives for awhile. The style of the recipe is unusual but easy to follow when baking.

Grate young fresh carrots to give one full cup & strain the juice from 400g can of crushed pineapple.

In a bowl mix 1 cup of plain flour, 1 tsp baking powder, 3/4 tsp baking soda, 1/2 tsp each of salt & cinnamon & 3/4 cup sugar. Add 2 eggs and 5 Tbsp oil (just under 1/3 cup).

Sir in the grated carrot, crushed pineapple & 1/4 cup chopped walnuts. Bake in a moderate oven 350 oF (175 oC) for 30 to 40 minutes and cool before covering with topping.

To make cream cheese topping, place in a bowl 3 Tbsp butter, 3 Tbsp cream cheese, 1/2 tsp vanilla, 250g icing sugar and beat very well. If too thick add a small amount of milk to give a smooth consistency.

Serves 8

  1. Love Gretta Anna recipes. If you have the Orange covered book would you be able to give everyone the Creme Brulee recipe..... divine. I lost my book years ago and still remember how good this recipe was!!!!!

  3. I used to use this recipe from my mum's book in Oz. I now live in the UK and have been searching for an alternative for ages!!! Thankyou for posting this its the best ever carrot cake :-)

  6. Hello, I am looking for a "ginger sauce" recipe by Greta Anna that my long-time-ago New Zealand flat-mate used to serve with fish. Sadly, I have not been able to locate it within the Greta Anna cookbooks that I have found in bookstores. Thanks very much for any help in locating this, Lisle

  7. I just googled Gretta's name and found this. I am using her books tonight as have guest coming and she's a reliable winner even in this time. I met Gretta and went to her house for lunch as she, like me, was a Christian Jew (a rare breed). What an amazingly sweet woman...and so humble. She could have been a Maggie Beer if she wanted to for sure. Love her food. I want to add (I don't often boast)...that I bought an unused set of her books at Vinnies for $10 last year. I was so delighted as mine are falling apart.
